Boudin Blanc

By: Phil Scriver, LC200 Historian

Charbonneau was well known for his cooking talents. He frequently made a special treat for the Expedition when they were in buffalo country. Lewis notes that everyone on the Expedition considered this Boudin Blanc "one of the greatest delacies of the forest."

Lewis somehow managed to observe Charbonneau closely enough to find out his secret recipe which he recorded in his journal.
